MIM 14: Red pesto pasta with chorizo, feta and basil

As a working Mom I often have to cook meals that can be made in minutes. Sometimes I am so tired I hardly feel that I can make any food, but then pasta will save me!! 

Luckily all my family members enjoy pasta. They prefer homemade fresh pasta, but if they are hungry I can dish up dry pasta with a nice sauce, and they will be happy! 

I have learned that something that can brighten up most pasta dishes is chorizo sausages! I have made this delicious pasta dish on a Tuesday night. On that particular day I did not have time to go and do shopping since the previous Monday and used up everything that was left in my fridge! Luckily there was some chorizo sausages, a bottle of Princess Pesto’s red pesto and some fresh basil in my herb garden. It was a delicious meal! 

 

Ingredients

400g dried pasta

Three quarters of a bottle of Pesto Princess’s red pesto (Hubby ate the rest on his sandwich :( !!)

15ml olive oil

450g chorizo sausages, sliced

I small onion, peeled and sliced

4 baby marrows, sliced

50g pitted black olives

200g feta, crumbed

a handful of fresh basil leaves

salt and pepper 

Method

Cook the pasta in a large saucepan of salted boiling water following packet directions until al dente. Drain.

Mix the drained pasta with the red pesto.

Heat the oil in a large frying pan. Add the chorizo, onion and baby marrow and cook for 2 to 3 minutes.

Add the chorizo mixture to the pasta and gently toss to combine.

Add the black olives, feta and fresh basil and season with salt and black pepper.

Serve medium hot.

    I completely agree – chorizo sausages can improve almost any meal, but they really come into their own when we have no idea what to cook. Dinner will then often be pasta with chorizo as you suggest, or risotto or paella!
